Stephen Akbeg

Raised in Belgium, Stephen conceived of the idea for a mobile Belgian Waffle truck that could prepare and serve waffles. Working closely with HCLC director Colin Twitchell, Stephen developed a business plan and outfitted a used mail truck with a kitchen, and Simply Waffles was born. While American-style waffles are made with batter similar to pancakes, Stephen’s waffles are made with traditional dough imported from Belgium, giving them a thicker, bread-like texture – a texture that appeals to many Americans, as the Waffle Truck has become a fixture on campus, serving crowds at events and satisfying late-night snack cravings.  Stephen hopes to build on his success and continue expanding his business to other area colleges.
